Nothing fancy. Something I can cook up during the day and leave for him to warm up in the microwave in the evening when I am in class. Anyone?? No gourmet stuff, please.

| Leave him a slab of salmon and point him to the grill...salmon over mesquite is good eats.
My other suggestion would have included corn meal and a deep fryer, but that probably defeats the primary purpose he is wanting the fish for in the first place...

Well you can get it canned but it will fall thru the cracks in the grill.
He just wants something he can warm up in a minute or so. If I grill the salmon, will it still be tasty from the microwave? And you are correct, no breaded stuff.

WHAT kind of fish are we speaking of?
I have lots of easy ways to cook fish as we eat it about 3 or 4 times a week.

| I absolutely love salmon croquettes with white rice and it doesn't taste bad when heated in the microwave. Caution, because not everyone can make good croquettes. I'd make some for you if I were closer. http://www.cooks.com/rec/search/0,1-...uettes,FF.html

That and big jumbo shrimp (8-9 count per pound)- another grilling favorite. Quote: |

| Not sure how well it would survive the microwave...rare is the instance that I had any to keep. I do know that the small scraps I would keep on those occasions had a much more pronounced smoke flavor when reheated.
Fish is one of those things that I tend not to try and cook in advance...sorry 'bout that.

| When he reheats it, tell him to heat it on 50-60% power. Fish doesn't reheat well.

Hannah I do not eat fresh water fish, so I cannot help much.
IF you have a Trader Joes in your area, be it even an hours ride it would be well worth going with a cooler to stock up on their flas frozen fish. The HALIBUT is award winning, not expensive, and this is coming from someone who has never bought fish at the store before.
For a few fast fish meals, you can put a fillet in tin foil, sprinkle with lemon juice and wine , and let it cook over the grill wrapped. Serve with rice or pasta.
You could also have it all prepared to be zapped in the Microwave (I don't have one so do not know how to time it) So fish in dish, cover with wine and a squeeze of a lemon, and serve. Or you can add a few breadcrumbs on top and add sliced black olives or even some stewed tomatoes.
Mmmmmm |
